Chicken and Rice Meal Prep Bowls for Four
Four lunches are easier to organise when the grain, chicken and vegetables are cooked as separate components. This version uses a simple lemon dressing kept on the side. It is a practical preparation plan rather than a calorie-controlled diet, and it includes a safe storage approach for the portions you will not eat immediately.

Ingredients
US kitchen measures and practical metric equivalents. For cans, the weight is the package size before draining unless stated otherwise.

Ingredient notes: Check the labels of seasonings and packaged ingredients for your own allergen needs.
Step-by-step method
- Read the rice package and set out four shallow food containers. Heat the oven to 425°F (218°C). Prepare a clean tray for the broccoli and a separate tray for the raw chicken so that juices cannot reach the vegetables.
- Rinse the rice only if its package directions call for it. Cook using the stated water ratio and method. Keep an eye on the finish time so the cooked grain can be served or transferred promptly rather than remaining on the counter.
- Toss broccoli with 1 tablespoon oil and about half the salt. Spread on its tray. Coat chicken with the remaining tablespoon oil, paprika and remaining salt. Keep raw-poultry utensils separate from the clean portioning tools.
- Roast the broccoli until the stems are tender, checking around 18–22 minutes. Cook the chicken on its own tray, beginning checks around 18 minutes and allowing longer for thick pieces. Chicken must reach 165°F (74°C) in the thickest part.
- Move the cooked chicken to a clean board, rest briefly, then slice with a clean knife. Divide the rice, chicken and broccoli among the shallow containers. Portion lemon juice separately to add after reheating or at the table.
- Refrigerate the later portions promptly using the storage guide; do not wait for a large batch to become completely cold on the counter. Label the preparation date. Reheat cooked leftovers to 165°F (74°C), checking more than one part of the bowl.
Portion without pretending every bowl is identical
Divide the cooked components visually or weigh them if consistent portions are important to you. Chicken loses water during cooking and rice absorbs different amounts depending on the variety, so equal raw measures are not a precise nutrition calculation. These bowls are a planning example, not a prescribed energy or protein target. Adjust the amount you serve to your circumstances and use verified individual advice for medical dietary needs.
Keep the components useful
A plain base makes later meals easier to change. Add a different suitable dressing after reheating, serve an immediate portion with a salad, or use a separately stored vegetable on another day. Keep cold sauces separate from the hot components. If you replace broccoli with a vegetable that cooks faster, use a separate tray and check it independently. One tray schedule does not make different ingredients cook at the same rate.
Plan four lunches rather than an unsafe week
Properly refrigerated cooked leftovers generally have a 3–4 day window, not an automatic full workweek. Freeze a portion promptly if it will not be used within that period, and thaw and reheat using the linked guidance. Transport a cold bowl in an insulated bag with adequate cold sources if you cannot put it straight into a refrigerator. An office microwave is for reheating a safely stored meal, not for undoing a morning of warm storage.
Your quick checklist
- Read the whole method and measure the ingredients before heating.
- Check your appliance instructions and leave room for air to circulate.
- Use the doneness checks in the method; the clock is only a starting guide.
Common questions
Can I make five days of these bowls?
Do not assume five days in the refrigerator is suitable. Plan to freeze a later portion promptly or prepare another batch midweek.
Can I replace the rice?
Yes, using a separately appropriate method for the grain. Follow its package ratio and timing, and apply the same prompt cooling and storage plan.
